Singapore Airlines Holds Its World Gourmet Forum in Beijing

Singapore Airlines' signature event, the World Gourmet Forum, was held in China World Hotel in Beijing on July 20. Featuring an ensemble of all the world-renowned chefs in the Airline's International Culinary Panel (ICP), the event showcases the outstanding range and quality of the Airline's inflight food and beverage offerings.
As one of the world's premier carriers, Singapore Airlines aims to be at the forefront of the air travel industry through innovation in its product and service offering. This is so that the Airline can consistently bring about new and exciting changes to the air travel and lifestyle experience of our customers.
The Singapore Airlines World Gourmet Forum is a perfect example of this commitment.
Besides being an event for attendees to the enjoy top-of-the-range cuisines from around the world, the Forum also serves as an opportunity for the Airline to work with all its ICP chefs to discuss dining trends and to set the direction for the Airlines' inflight service next year.

International Culinary Panel
Singapore Airlines set up the International Culinary Panel in 1998 comprising award-winning chefs from the culinary capitals of the world. The Panel works closely with the Airline's own chefs, to specially create the unique selection that is available on board. The Panel includes:
- Georges Blanc of France: Chef Blanc has been consistently awarded the three-star rating in the Michelin Guide.
- Sanjeev Kapoor of India: Chef, TV host, author of ten best selling cookbooks, restaurateur and winner of several culinary awards, Master Chef Sanjeev Kapoor's innovations in Indian cuisine have made him a household name in India and abroad.
- Sam Leong of Singapore: Renowned for his ability to give traditional Singaporean Chinese cuisine a modern touch with the use of Western and Asian spices.
- Matthew James Moran of Australia: Chef Moran has received two prestigious Chef's Hat by the influential Sydney Morning Herald Good Food Guide. He was the youngest chef ever to be given the coveted award when he was first recognised in 2001.
- Yoshihiro Murata of Japan: One of the very few chefs able to discuss Japanese cuisine from a global perspective and whose creations are famed for their subtle French accent.
- Nancy Oakes of the United States: Award-winning chef and the moving spirit behind San Francisco's best-known restaurant, Boulevard.
- Alfred Portale of the United States: Internationally lauded pioneer of New American Cuisine, Chef Portale's Gotham Bar and Grill is renowned all over the United States.
- Gordon Ramsay of United Kingdom: Awarded a prestigious three-star rating in the Michelin Guide and known for his ability to marry rich flavours with healthy cooking and creative genius.
- Yeung Koon Yat of Hong Kong:One of three chefs in the world to be awarded the Gold Medal by the Club Des Chefs des Chefs. He is also known as the "King of Abalone" in Asia.
A selection of the finest wines, handpicked for Singapore Airlines by our panel of renowned wine consultants, complements Singapore Airlines' World Gourmet Cuisine.
Customers who require special meals for religious or medical reasons are also catered for, with meal requests taken at the time of reservation.
First Class
- Customers on flights of four hours or more have the flexibility to choose when they want to eat. The meal service is customised, allowing them to skip dishes and dine whenever they wish.
- Customers flying on the Airline's newest aircraft can experience an even more refined dining experience with the Airline's brand new a la carte menu.
- All meals are served on fine bone china and crystal-ware specially designed by Givenchy.
- On long-haul flights, an enhanced snack service, offering a selection of savoury and sweet items including biscuits, instant noodles, soup or fresh fruit, is available.
- Customers can also choose from a wide range of bread rolls such as ciabatta, focaccia, sesame seed kaiser rolls and kalamata olive bread and four flavours of extra virgin olive oil (natural, balsamic vinegar, chilli and truffle).
- Our latest coffee selection includes Brazil Santos Bourbon, Colombian Supremo, Kenyan AA Kilimanjaro and Jamaican Blue Mountain, exclusively for First Class customers.
Business Class
- A level of service in keeping with First Class is offered to Singapore Airlines Business Class customers, with meals served in service-ware specially designed by Givenchy, a choice of coffee that includes espresso and cappuccino, and a cheeseboard service featuring the finest cheeses.
- An enhanced snack service is available on long-haul flights. Customers can choose from sandwiches and a selection of savoury and sweet items such as biscuits, soup, instant noodles or fresh fruit.
- A fine selection of brewed coffee comprising Brazil Santos Bourbon, Colombian Supremo, and Kenyan AA Kilimanjaro is available for all Business Class customers.
Economy Class
- Singapore Airlines adjusts the menus to suit customer tastes. For example, on the Singapore-Hong Kong-San Francisco route, customers can choose from two non-vegetarian dishes and one Indian vegetarian dish, while on the Singapore-Beijing route, passengers can select from various International and Asian meal options.
- On most long-haul flights, Singapore Airlines also offers snacks like savoury buns/sandwiches and a selection of savoury and sweet items such as fresh fruit, biscuits, fruit bars, chocolate bars or muesli bars.
